Peanut Butter Cookies

I love them. When i bake this, our house smells divine.


200 g plain flour
1/2 tsp bicarbonate of soda
115 g unsalted butter
100 g caster sugar
100 g brown sugar
1 egg
225 g crunchy peanut butter
pinch of salt


Sift the flour and the bicarbonate of soda together. In a separate bowl, beat the butter and sugar until soft and creamy. Combine egg, flour mixture, peanut butter and salt. Add the butter and sugar mixture, and mix until smooth.

Wrap the dough in foil and refrigerate for at least two hours, preferable overnight.

Preheat the oven at 160 deg C.

Shape the dough into 3 cm balls and place them 5 cm apart on baking sheets. Flatten slightly with a fork. Bake for 15 min or until golden.

Remove from the oven and allow to cool. Store in an airtight container for upto 5 days.
