Ingredients2 inch ginger 6 cloves garlic 5 green chillies 3 cloves 1 inch cinnamon 1 tsp fennel seeds 1 star anise 1/2 tsp coriander seeds 1/2 tsp Cumin seeds 500 g Small onions or sambar onions 600 g Carrots. sliced 1 can Chopped Tomatoes
Grind garlic, ginger, green chillies, cinnamon, cloves, fennel seeds and star anise with little water and make it into a paste.
In a pan, add about 2 tsp of oil and add cumin seeds till gets browned and then add the paste. Keep stirring till the oil comes up. Now add the small onions and stirr for about 5 min. Add the chopped tomatoes along with the salt and stirr till the oil comes up.
Finally add the carrots and let it cook for about 15 min or till its cooked. Serve hot with rice.
