IngredientsVegetables – Cauliflower, carrot, peppers and peas – sliced, long Rice – 1 cup Vegetable Stock cubes – 2 Onions – 2 – sliced, long Garlic – 5 pods, sliced, long Cumin seeds – 1 tsp Garam Masala – 1 tbsp Salt to taste
Add 2 cups of hot water to the stock cubes and let it dissolve. In a Pressure cooker, add little bit of oil and when it is hot add the cumin seeds. After the cumin gets browned, add the garlic and toss it for sometime. Then add the onion and toss it till it gets browned. Finally add garam masala and the vegetable. Toss till all the vegetables are coated with the masala.
Add the Rice in the cooker and toss it with the vegetable. Add salt and the 2 cups of stock water. Close the cooker and keep it till about 4 whistles.
Serve hot with curries or raita.
P.S. You can substitute the pressure cooker for a pan or toss the vegetables in the pan and then transfer to the rice cooker.
