Wholemeal Pancakes

I wanted to make pancakes for a long time and when i came across this healthy option pancake, I decided to try it out. The credit for the idea goes to Baking and Books blog. I made little bit of changes and I have to say this is one of the fluffiest pancakes i have ever eaten (absolute yumm). This is a good breakfast option for kids and diabetic patients. Even though they are fluffy, they are seriously heavy as well with all the wheat germ in it. This recipe would make about 8 medium sized pancakes.

1 1/2 cup Wholemeal flour
1 tbsp brown sugar
1 tsp baking powder
1 tsp baking soda
1/2 tsp Cinnamon powder
1/4 tsp Nutmeg powder
1/4 tsp Salt
2 cups Buttermilk
2 Medium Eggs
1/4 cup Olive oil
1/2 tsp Vanilla Extract
Butter for greasing the pan

With Honey

With Nutella

Or my fav Nutella Sandwich 🙂

  1. In a bowl, whisk together the buttermilk, eggs, olive oil and vanilla.
  2. Then add the flour, sugar, baking soda, baking powder, spices and salt to the wet ingredients.
  3. Whisk till they are blended properly.
  4. Allow the batter to rest at room temperature for about 15 minutes.
  5. Heat a small frying pan over medium flame and lightly grease the pan with the help of paper towel.
  6. Pour the batter in the pan and cook them in medium heat on both sides till its browned.
  7. Serve immediately with honey or nutella on top 🙂 .

P.S. Don’t substitute butter with oil. It will taste awful.
